Hacienda Sonora sits at the foot of Costa Rica’s Poás Volcano, where sustainability and coffee production go hand in hand. The 100-hectare farm runs entirely on renewable hydroelectric energy, powering its mills and providing free electricity to everyone living and working there. Around 45 hectares are dedicated to shade-grown coffee, surrounded by native vegetation that supports biodiversity and healthy, nutrient-rich soil. Another 35 hectares remain protected forest, while 20 hectares grow sugarcane, a tradition maintained for over 150 years.
Hacienda Sonora’s own micromill allows varieties to be processed separately, creating distinctive microlots. All coffees are Honey or Natural processed, reducing water use and environmental impact. This lot features Marsellesa, a Sarchimor hybrid combining Villa Sarchi’s Bourbon-related cup qualities with strong disease resistance. After careful handpicking, ripe cherries are naturally dried on raised beds or patios and regularly turned to ensure slow, even drying and consistent quality.
