La Plata Natural is produced in La Plata, Huila, and processed at Los Patios, the proprietary facility of our partners at The Coffee Quest. Cherries are sourced from smallholder producers in the region, whose farms average 3 hectares and sit at elevations between 1,600 and 1,900 meters above sea level. This lot is composed of traditional regional varieties, including Castillo, Colombia, and Caturra. Upon arrival at Los Patios, the cherries are floated and hand-selected to ensure quality. They are then fermented in sealed bags for 24 to 36 hours, followed by a two-day oxidation phase in punnets. After oxidation, the cherries are drained and dried in a mechanical silo for four days at a constant temperature of 38°C, until they reach a final moisture content of 10–11%.
